4th of July



I love cupcakes so much! It has been way too long since I have baked my favorite treat. To celebrate the 4th of July, America's Birthday, I made these patriotic sweeties. I used the Margarita Cupcake recipe from this book by these super creative vegan chefs. I split the batter into three bowls, left one plain and colored the others with gel food coloring in red and blue. I used a large spoon to gently layer the batters into the baking cups. 


They turned out really well. They taste of summer limes, very light and subtle. The icing is made with lime juice, tequila, "butter", soy milk, and powdered sugar with a little pinch of salt. They are a very refreshing and light dessert. I hope our friends enjoy them. 


I couldn't resist getting some fireworks! Nothing too big or dangerous, just some sparklers and small fountains. Yay America! I hope you all have a great and safe 4th of July!
