There is something about being near the sea that makes me want to eat lots of seafood. Since we are staying in a house with 8+ people we thought it would be nice to make Byron's favorite meal, a Low Country Boil. We made an outrageous amount of food and it was awesome.
All you do is boil all of the ingredients in the biggest pot that you can find. Start with the potatoes, sausage and Old Bay for approxamatly 15 minutes. Add the corn for and boil for an additional 10 minutes. Finally, add the shrimp and boil for another 5 minutes. Strain everything and pour onto newspaper right on the table for everyone to enjoy. Serve with cocktail sauce, melted butter and/or ranch dip. So Good!
I also seared some scallops as an appetizer. I think Chef Ramsey would have approved.
